We never got to Le Bamboche, but we certainly walked many times through the courtyard where you (unknowd to us) lived, to that housewares store in the back, and rue de Bac was my wife’s favorite street in all of Paris. It’s sad that Colliot has made his new restaurant in the Marais a head case of cuisine. Both L’Astrance and Pierre Gagnaire (although at vastly different price points than Colliot) manage to combine cerebral creativity with heart melting executions, so maybe Colliot will yet get there. Barcelona certainly sounds inviting. "Shunka" by the way means "ham" in Slovak,although I suspect there’s no connection across the languages with Adria’s use of it at both restaurants. All the best,
