The potato foam at Le Richer was more like an airy puree, though, than a by-product of bubble bath. Hope this clarifies things. Best, Alec

The food sounds delicious but I would proably prefer the lamb without the potato foam. Not sure why, but just have never gotten the foam fad. Thanks for sharing.
